Vegan Banana Bread (AIP and Paleo)

I love sweets. There I said it. Can you tell? I have such a sweet tooth. But not super sweet, I want it to be kind of sweet, and bread. Oh bread, baked goods. The best.

So I had a craving for banana bread, and my favorite recipe is obviously not a good fit for AIP and Paleo, so I went all over the webs to find one that worked! And what do you know I found one and its actually very good! Here’s where I pulled this from.

The best way to enjoy this is toasted the next day, you know, if it even lasts until the next day. This is a little more dense than normal banana bread, but still delish!

AIP Paleo Banana Bread – Vegan

Ingredients
  • 3 ripe bananas (medium size)
  • 1 cup cassava flour
  • 1/4 cup coconut flour
  • 1/2 cup coconut sugar
  • 3 Tablespoons oil ( The original author used avocado oil, so that’s what I did too)
  • 1/2 teaspoon baking soda
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • pinch salt

Instructions

  1. Peel bananas and then use a fork to mash them in a mixing bowl.

  2. Mix in ingredients in the order they are listed. Mix well.

  3. Line a small bread pan with parchment paper (or grease well) and spoon in batter. Use a spatula to smooth the top of the batter.

  4. Bake at 350*F for 50 minutes. (check on it at 40 minutes in case your oven runs a little hotter.)

  5. Let cool and then slice.
